Lemon butter? Lemon curd? Choose both!

Do you make lemon butter? Or are you instead making lemon curd? Do you use 4 eggs? ... or 2 eggs and 2 yolks? 

In my family we always called it lemon butter, and I've made it with the 4-eggs approach and also the 2 eggs and 2 yolks approach.

And this one is named their 'best-ever lemon curd recipe'.  It's a 2 eggs and 2 egg yolk version.

The benefit of 2 eggs and 2 yolks is that you have egg whites left over. Silver lining - lemon butter made with this recipe is also a great opportunity to make meringue with the leftover egg whites. 

Oh, and let me just add, that meringue and lemon butter make a great combination - lots of sugar, and lots of lemony goodness.
